<p>Too much water activity in gummies can lead to reduced shelf life and inconsistent product quality. Measuring water activity can ensure that gummies have dried to a point where bacteria can no longer grow. Our Water Activity Meter is portable and lightweight and an important part of gummy production.</p>

How long does the test take?

How big of a sample is needed? 

<p>Water Activity is expressed as “aw”. It is actually a ratio between the vapor pressure of the food itself when in a completely undisturbed balance with the surrounding air media &amp; the vapor pressure of distilled water under identical conditions. A Water Activity of 0.80 means that the vapor pressure of the food is 80% that of pure water.</p>
<p>Layman&#8217;s Terms? Water activity is a measurement of free water that can be transferred from the product. This is why bacteria can&#8217;t survive when water activity is low. The water that is in the product is &#8220;locked up&#8221; and bacteria are unable to use it.</p>
